From The Speculaas Spice Company

The Speculaas Spice Company should be hailed as a very special enterprise. The amount of work they have done to allow people to recreate the Speculaas biscuits is incredible; alongside their perfect and thoroughly blended spice creation and their carefully created mould, they provide newbies with instant baking expertise and an opportunity to delve in to the delicious world of the Speculaas biscuit.
biscuit is sweet and spicy and absolutely delicious, but the key thing to note about a Speculaas biscuit is the appearance. The word ‘Speculaas’ means mirror and the way that the biscuits are created all depends upon how well you can use the mould.
I’m quite a keen baker and am often found googling new culinary delights that I read about in books. But sometimes the results I imagine in my head don’t translate very well in the finished result. My worst disaster yet was a red velvet cake which I made from an American recipe blog. The results were unpalatable.
I’d never heard of ‘Speculaas’ until watching the Great British Bake Off where a cake was made. The results looked highly appetising and it was enough to gain my interest.
Upon making the first batch of my Speculaas cookies, the heady concoction of cinnamon, cloves, ginger and various other spices tantalised my senses and I was keen to taste the finished results. However, it was a good job they tasted so nice as the first batch was a bit of a disaster appearance-wise.
At this point I was glad that The Speculaas Spice Company had put in so much effort to pointing out that failures can be common in the first few attempts. Apart from the importance of cleaning, oiling, drying and then re-oiling the mould, the first few attempts are likely going to fail due to the mould being too new and then you have to get the dough amounts right. Too much dough and you can’t get it in the mould, too little and the dough will stick.
You may well ask whether it is worth all this effort for a humble biscuit, but when the sweet spicy luxurious taste envelops your senses and you have the added bonus of the perfect appearance; you realise it really is more of an art form of a biscuit, that is worth making time for.
For me the most vital part of the kit was the instructions, they provided me with the inspiration to want to perfect my craft of making a Speculaas biscuit. The passion from the owner of The Speculaas Company clearly shines through the writing of the instructions and makes you as interested as he is in the beauty of this very special biscuit.
